I was in the mood for cabbage stew and didn't really feel like eating it the way my Grandma would cook it so I made up a new recipe that is low in fat and cholesterol. This cabbage stew is vegetarian and vegan friendly. Yumm!
For this stew you will need:
3 carrots chopped as shown
3 roma tomatoes chopped as well
1 pound white beans *sorted and rinsed*
1/2 head of cabbage
4 cloves garlic sliced
1 Tbsp vegetable better than broth base Vegan *equal to 1 bullion cube*
6-8 cups water
1 bay leaf
Salt & Pepper to taste
Combine all ingredients except cabbage in large stock/soup pot.
Cut the cabbage last, I like hunks of cabbage in my stew so I made sure and leave some pieces larger.
Allow stew to simmer on med-high heat until beans and veggies are tender, about 45 mins.
You may need to add more water as needed. Enjoy!
