No stress cake
This is a moist, sweet & sticky cake.
It is very easy to make.
It is a little bit different from the usual sponge cake.
All the cake is made in one bowl & the icing is made in a pot so not much washing up either.

Step 1Blend the pineapples to a purée.
Heat oven 180/350 degrees.

Step 2Add all cake ingredients in to a bowl.

Step 3Mix thoroughly to combine.

Step 4Pour into cake tin & bake for approx 40 mins.

Step 5Make the icing...
Combine sugar, butter & evaporated milk in a pan.

Step 6Heat until butter is melted.
Boil for approx 5 mins until thickened.

Step 7Add the coconut & vanilla.
Stir to combine.

Step 8Add the icing to the top of the cake while the cake is still hot.

Step 9Allow to cool & serve.
