This is a moist, sweet & sticky cake. It is very easy to make. It is a little bit different from the usual sponge cake. All the cake is made in one bowl & the icing is made in a pot so not much washing up either.
This is a moist, sweet & sticky cake. It is very easy to make. It is a little bit different from the usual sponge cake. All the cake is made in one bowl & the icing is made in a pot so not much washing up either.
Blend the pineapples to a purée. Heat oven 180/350 degrees.
Add all cake ingredients in to a bowl.
Mix thoroughly to combine.
Pour into cake tin & bake for approx 40 mins.
Make the icing... Combine sugar, butter & evaporated milk in a pan.
Heat until butter is melted. Boil for approx 5 mins until thickened.
Add the coconut & vanilla. Stir to combine.
Add the icing to the top of the cake while the cake is still hot.
Allow to cool & serve.
