A quick and easy starter
A simple tart using bought puff pastry, cherry tomatoes and halloumi cheese.

    Heat the oven to 220C, 425F, gas mark 7. Divide the pastry into four pieces and roll each into a 10cm circle. Cut a ring half the thickness of the pastry 1cm from the edge, and prick the bottom of the area inside the ring with the end of a fork. Place them on non-stick parchment on a baking sheet.

    Arrange the cherry tomatoes over the inner circle of each pastry base. Tuck the pieces of halloumi in among the tomatoes, then sprinkle with dried oregano, salt and black pepper. Drizzle over a little olive oil.

    Bake for 20-25 minutes until the pastry and cheese are golden and serve hot or lukewarm with green salad.
