We picked a few fresh raspberries at the weekend and russled this up while we were dishing up dinner.
The eggs take a while to stiften, be patient.

Preheat your oven to Gas mark 8.
Place the raspberries into the base of the pastry case.
In a bowl mix the egg whites until stiff peaks.
Using a metal spoon fold the caster sugar into the egg whites.
Now spoon mixture over the raspberries.
You are now ready to sprinkle the sugar over the top (this creates the golden sparkle).
Place at the top of the oven.
Bake for about 3 mins, BUT watch out incase your oven is hotter than mine.
When cooked meringue will be golden.
