Courgette & walnut cake
This is a good way to use up leftover courgettes.
It tastes really moist.
You can add icing if you wish but it doesn't need it.

Step 1Heat oven 180 degrees.
Mix all dry ingredients together.

Step 2Mix in the eggs & oil.

Step 3Fold through the courgette & nuts.

Step 4Pour into a tin & bake for 50 mins to 1 hr until cooked through.

Step 5Leave to cool.
Serve.
