Chocolate Chip Cookie Dough ice cream Cake
This is quite time consuming to make but is definitely worth the effort.
It is best made the day before and allowed to set up overnight.
It will take approx 30 mins at room temp to defrost & soften so you can eat it.

You Will Need

Step 1Pre Heat oven 300/150/ gas 2.
Put all dry ingredients in bowl & mix to combine.

Step 2Add egg, buttermilk & oil to dry ingredients.
Mix to combine.

Step 3Add vanilla & water.
Mix to combine.

Step 4Pour into two tins & cook for approx 40 mins.
Once cooked remove & cool completely.

Step 5For cookie dough...
Cream butter & sugar.

Step 6Add flour & milk.
Mix throughly. The dough will be thick.

Step 7add chocolate chips & combine.

Step 8Roll dough into small balls.
Place in fridge to firm up.

Step 9Once cake is cool & dough firm make the ice cream.
Combine cream cheese, sugar, milk & vanilla.
Mix to combine.

Step 10Fold in whipping cream .

Step 11Add chocolate chips & combine.

Step 12Add 3/4 of the cookie dough balls.
Stir to combine.

Step 13Place 1st layer of cake into clean, lined tin.
Add 1/2 ice cream mix on top.

Step 14Add 2nd layer of cake on top of ice cream.
Place remaining ice cream on top.
Place in freezer for at least 6-8 hours or overnight.

Step 15Remove from freezer approx 30 mins before serving.

Step 16Add remaining cookie dough balls to top of cake & drizzle with chocolate sauce.
