Learn how-to bake pumpkin bars and a mint chocolate cake with Geraldine's Bake Shoppe & Deli in Pocatello, Idaho.


How did you get started?

A woman named Geraldine was known for her yummy cinnamon rolls and soft, delicious crescent rolls. She was always very crafty and was looking for a way to earn extra money for her family. She actually started baking in a shared space with another business and selling her rolls out of that space. After a time she was popular enough that she needed her own, larger space and moved to the present location where we bought the business from her 10 years ago.

What are your specialities?

We have been voted for 10 years in a row as the favorite bakery by the readers of our local paper, the Idaho State Journal. We bake from scratch because we believe the best quality comes from using the highest quality ingredients. We are most famous for our cinnamon rolls, orange rolls and our crescent and parkerhouse rolls. They are incredibly soft and so delicious. Obviously, these are popular especially during Thanksgiving and Christmas. During the week of Thanksgiving we sell over 5000 dozen rolls.! We also sell about 150 pumpkin rolls, and hundreds of dozens of cinnamon rolls. We have so many delicious things that our customers have a hard time deciding. We are open for breakfast, lunch and dinner. We have tasty salads, hot soups and over a dozen sandwich options for lunch. We also make pumpkin bars, brownies, oreo cookies, sugar cookies with buttercream, over 10 kinds of cookies such as chocolate chip, toffee, fudge macaroon, and strawberry shortcake. As well as all sorts of cake breads - like pumpkin chocolate chip, lemon poppyseed, sliced almond and an apple crumb that is amazing.

What's your personal favorite thing on the menu?

I think nothing is better than a warm, soft cinnamon roll with buttercream on top. My husband would say the chocolate cake roll is his favorite. Especially when we put raspberry inside.

What's on the stereo?

We like Pandora because everyone likes a good tune on when working. Of course my early morning bakers listen to the loud stuff at 4 a.m. because it keeps them awake and moving!

Where else should we visit in your area?

We are only a town of about 60,000 (when you combine with Pocatello) so Idaho State University is a great university to have in town. There are great concerts that come to the Performing Arts Center. It's a smaller venue, so we get to have more intimate concert experiences. Only 25 minutes away is Lava Hot Springs where there are natural hot springs you can relax in.

Do you host any special events?

We are a big supporter of our local schools and charities. We love to donate gift certificates for our yummy treats for the school fundraisers and have participated recently in the Breast Cancer awareness activities in August.

Is there anything else you'd like us to know?

We love where we do business. Pocatello consumers are very locally minded and we have been supported well throughout the years. We just make delicious food for our friends and neighbors. Our recipes are handed down from mothers, grandmothers and friends. We always say that our treats have no calories because it is baked with love, and there are no calories in love. (It's what we tell ourselves so eating a fudge brownie is even more delicious without the guilt!) We are just people who appreciate good food and love to share that delicious baked treat with our friends.
