Here is a simple recipe for making your very own truffles! These truffles make great presents for anyone! I will warn you everyone will love these truffles and they will all magically disappear! :)
Chop the chocolate in small pieces, make sure the pieces are not to big or too small. After put the chopped chocolate in a heat proof bowl as we are going to add hot cream.
In a sauce pan add the cream over medium heat allow the cream to boil. At this time you may add some flavouring. eg. vanilla extract....if you add solid things like orange peel make sure you strain the cream and take out the orange peel or whatever you added.
Next, pour the cream over the chocolate. Wait about one minute and then with a wooden spoon mix the cream and chocolate together gently until both are combined. Transfer the chocolate mixture into a shallow dish or baking pan, cover with plastic wrap and pop it in the fridge for about 1 hour or until it is slightly hard and still easy to work with.
Take you baking sheet and line it with parchment paper. Now you are going to be forming the truffles. Take 2 small kitchen spoons and form about 1 inch blobs and place them on the baking sheet. Pop them in the fridge for about 10-20 minutes.
Then use your hands to roll the the truffles into balls. Make sure you don't have them in your hands too long or else they will start to get soft and melt. What you want to do is rinse your hands in cold or cool water to ensure your hands are not to warm. The trick is to roll the truffles in between your two ends in a quick circular motion.
Now comes the fun part! Get out your topping and put your different toppings in a shallow dish or bowl. My suggestion would be to use cocoa powder which is the tradition kind of truffles or maybe crushed candy canes for christmas time. Its up to you, have fun and be creative!
Put one of your truffles in the desired topping you want and move the bowl in a circular motion to ensure the truffles is covered in the topping. You don't want to use your hands because they will get a bit messy and again the heat of your hands will make the chocolate warm.
Now transfer your truffles carefully into a air tight container. I used small cupcake holder to put them in and used parchment paper to separate each layer. store the truffles in the fridge until you are ready to serve. The truffles are good for about 1 - 2 weeks. You can also store them in the freezer for about a month. It is best to make truffles fresh but they can keep pretty well. This would make a really great gift for anyone!
