A Welsh Twist!
This is easily one of my favourite meals! I LOVE leeks!! :)

Ingredients:

500g Minced Lamb
3 carrots
1 cup frozen peas
5 medium potatoes
2 leeks
Grated Cheese
Oregano
Basil
Corriander
Stock Cube
flour

You Will Need

  • Step 1

    Peel your potatoes and put them on to boil.

    Peel and chop the carrots, and fry on a medium heat until the start to brown (about 5mins). Then add the frozen peas and continue to fry for another few minutes. Put these in to your oven dish.

  • Step 2

    Fry off the minced Lamb, and drain off any juices. Add the carrots and peas back in to the pan, and add the stock cube and herbs.

  • Step 3

    Now add a few table spoons of flour to soak up any excess juices. Put this in to your oven dish.

  • Step 4

    Put your leeks in to a pan with oil and a little butter and fry on low heat until they're soft.

    Now mash your potatoes WITHOUT adding milk and butter, then place on top of your minced lamb mix.

  • Step 5

    Cover the potatoes with the leeks, then cover these with the cheese.

    Pop in the oven on about 180 degrees for about 20-25mins.
