I am part Mexican and I love these treats.

As a child and teen my summers were filled with wait and longing. Everyday during the summer as the Respas Man came down my street. We children would wait to hear the faint honk honk of his horn and the jingling of his cart bells. We would rush out with the dollars that our Mom or relative had given us and get this cool tasty treat.

Time is about one hour or less depending on if you have to make the syrups or you have them handy.

    Place the crushed or shaved ice into a disposable cup or even a normal bowl.

    Grab your chilled Syrups and pour over the top. Get creative and use more than one flavor. Once done grab a spoon and dig in.

    In Mexico, California, Texas and the Southwestern United States, a finely shaved and syruped ice is called a respa, or respado. Raspar is Spanish for "scrape"; hence respado means, roughly, "scraped ice." Respas come in a wide range of fruit flavors and classic Mexican Flavors.

    The following are flavors that are normally found on his cart and come from my ethnic background.
    <b>The Respado Mans Cart of many flavors.:</b>

    The Kool-Aid Fruit Flavors: Mix your favorite packet of UNSWEETENED Kool-aid to the boiling Simple Syrup Mixture, bottle then cool.

    Leche(Milk): sweetened milk with cinnamon.

    Picocito(SpicySour): Add REAL lemon or lime juice and chili powder to the boiling syrup then refrigerate.

    Tamarind syrup: In a sauce pan on med low heat, add tam juice with sugar. Bring to a boil and reduce heat. Let cook on low until desired consistency is reached.

    Chamoy: Add fruit juice or extracts as well as chili powder a pinch of salt to the boiling syrup and mix well the cool in fridge.
