Take your favorite vegan brownie recipe and take out the nuts. I usually go for cake like brownies but this next step that turns them into peanut butter cup brownies can work with fudgey brownies as well.
Mix in 1/2 cup semi-sweet chocolate chips to the batter. Then place batter in a greased baking pan, once settled get out your creamy peanut butter(I use the Earth Balance brand found at Whole Foods, it is nice & needs no refrigeration or stirring)and plop 4-6 teaspoon sized blobs haphazardly around your brownie mix. Take a knife and use the tip to swirl the peanut butter into the brownie mixture, making sure the peanut butter is mixed into streaky strands and not clumped.
Bake the brownies like your normally do and enjoy!
