Using a paring knife, cut a hole in the top of each tomato. Scoop out the seeds with a small spoon and pour out any juice. Set aside.

In a small bowl, mix ricotta, spices, and half shredded parmesan.

Stuff equal amounts of filling into each tomato and place into a baking dish. Sprinkle with remaining parmesan and Bake for 20 minutes at 400 degrees.
*NOTE: If you are using large tomatoes, you may want to take them out of the oven at this point and slice them in half lengthwise. Sprinkle with a bit mpre parmesan and bake another 10 minutes. This is what I did with the tomatoes in the photo!

we did this on a campfire the other day!... although we didn't have any forks so we had trouble eating it! It is a really nice recipe though!
