ItÂ´s my friends birthday tomorrow so I decided to make him some yummy cupcakes. I wanted them to be extra delicious, so I combined two of my favourite things. Cookie and Cream bisquits and a variation of my favourite chocolate cake recipe. It turned out great. Read what I did.
Cut cookies in half. Keep as many as you need for your cupcake decoration. Crumble all other cookies.
Beat eggwhites with a little bit of salt for about two minutes. Than add 130g of sugar and vanilla sugar.
Beat egg yolk with 150g butter, than add 2/3 of the crumbled cookies, melted schocolade or cacao, 120g flour and baking powder. Add the eggwhite to the flour mixture aswell as the milk.
Be careful not to eat all the dough before finishing the cupcakes because itÂ´s to die for!
Put your cupcake wrappers in your baking tin and fill for 2/3 with dough. Bake at 180Â°C for 18min. than cool on a tray.
Beat creamcheese, melted butter, vanilla sugar and sugar, fill in a plastic bag and add the frosting, decorate with a cookie.
