Mix a Muzuki Yuzuki cocktail with BATCH in Peckham Rye, London
This beautifully balanced refreshing drink uses a house acid blend to counter the sweet notes of elderflower and sugar whiles allowing the subtle floral notes and umami flavours push though.

  • Step 1

    Mix all the ingredients together apart from the apple slices in a large jug.

  • Step 2

    Divide the condense of the jug between two sues vide bags.

  • Step 3

    Add 2 x 5 - 10 mm whole slices of apple to each bag.

  • Step 4

    Sous Vide at 70℃ for 2 hours.

  • Step 5

    Let cool - can take up to 3 to 4 hours

  • Step 6

    Add the content of the bag to a whipping creamer canister. Invert the creamer and add one N2O cartridge to the creamer. You should feel the gas pass through the liquid increasing how much gas is dissolved into the liquid.

  • Step 7

    Discard the first charger and add another charger to the creamer, do not remove the second canister.

  • Step 8

    Acid Solution for Muzuki Yuzuki

    Acid solution
    Ingredient
    100g Citric Acid
    100g Malic Acid
    100g Tartaric Acid
    390ml Water

    Method:
    Carefully weigh out each of the acid crystals and add together in a a jug.

    Add a neutral water to the mixture, deionised/distilled water is best

    Stir until the crystals are completely dissolved.

  • Step 9

    Serve:
    Pour desired amount into a cut glass old fashioned, add ice and garnish with a snap dragon!
