Cute Cookie Monster Muffins that will make you a hit in the office!

Cute muffins I made for a bake-off at work, fingers crossed I win :)

These muffins were inspired by an image on a blog which I have attached a link to.

I used a speedy chocolate muffin recipe from the goodtoknow website

Add the oil as needed, I used about half of what the recipe stated.

Taking the BBC Food recipe for basic buttercream icing, I made a batch which was used to attach the fur and make the eyes.

Use the frosting to stick the chocolate drops to the white buttons to make eyes.

Mix blue food colouring with the coconut. You will need quite a lot, I ran out which is why some of my cookie monsters are not so blue :)

Cut your mini cookies in half and we now have all the parts to make our cookie monsters.

Cover the tops of the muffins in the icing and then rub them in the coconut to cover.

Cut a slit near the muffin case for the mouth and push the cookie inside.

Press the eyes into the top of the muffins and your cookie monster is now complete. ENJOY!
