This is a savory yet sweet popsicle.
This is similar to the Lucas Popsicle sold throughout Mexico and the USA.

  • Step 1

    Soak tamarind in warm water for about 10 minutes. Squeeze and extract as much juice as possible from the pulp, adding a little extra warm water if necessary.

    Add the sugar, salt & chili powder to taste. Dissolve all the ingredients.

  • Step 2

    Pour into the Popsicle molds or plastic cups.

    ***For bite sized pops use a Ice cube tray cover with foil and poke with Toothpicks(for handle).

  • Step 3

    Freeze until firmly set (this should take a couple of hours, though feel free to make them several days ahead if that more convenient). To remove the pops, first remove the lids, then squeeze the sides of the molds, twisting them slightly, to dislodge the pop. (If necessary, rinse the molds under hot water first.)

    ***Bite sized take pop em out and stick them in a bowl to enjoy with friends.

omg i looove lucas popsicles...but living in mississippi now i cant find them like anywhere...sucks....i will try these for sure!
