Vegan Carrot Cake

yummy yummy in my tummy!

I was searching the net for a vegan carrot cake recipe and found the super moist carrot cake to be the easiest and most everyday super market friendly wise. The only thing that could be hard to come by is the Tofutti better than cream cheese, the cheapest place to get it is Trader Joe's!
I served this at xmas and my family loved it!

  1. Step 1

    Preparation:
    Pre-heat oven to 325. Grease and flour a 9-inch square baking pan.

  2. Step 2

    Combine applesauce, vanilla, vegan margarine, salt, baking powder, cinnamon, sugar, flour and soy milk until well mixed. Add carrots and walnuts.


  3. Step 3

    Spread batter evenly in baking pan. Bake for 45 minutes.

  4. Step 4

    Allow to cool then frost with:
    Ingredients:

    * 1 container Tofutti Better Than Cream Cheese
    * 1/2 cup soy margarine
    * 2 cups powdered sugar
    * 1 tsp vanilla extract
    * 1 1/2 tsp lemon juice (leave this out if you are a cream cheese frosting purist)

    Preparation:
    Let the Tofutti and soy margarine reach room temperature then combine the cream cheese and margarine. Slowly add the powdered sugar, then vanilla and lemon juice and use a blender or blending tool unless you like lumps, I don't mind them.
