Three Tiered Pizza

Maybe I better explain this one -
My New Year Resolution was to never cook the same thing twice - and so far I haven't made this, this year! So I have no photos yet! I made it back end of last year and it was amazing. Now my boyfriend is having to wait till he really wants this marvellous feat of pizza engineering 'cos I can only make it once!

  1. Step 1

    The idea behind this pizza is to keep a lovely thin crisp base but have loads and loads of toppings! The tortillas add stabilty to the pizza to keep toppings in place

  2. Step 2

    Get your oven on to preheat.
    Take your pizza base and make as if you are doing a "proper" pizza. Cover with passata (or tinned tomatoes or jar of pizza topping) leaving at least 1cm at edge for the crust. Add your toppings (I like peppers, onions, bacon, mushrooms, salami or similar, but who am I to tell you what to put on your pizza!)
    Dot with blobs of mozzarella (you could use that wierd grated stuff or some other cheese if you want)

    If you are putting meat on your pizza, make sure it is cooked already!

    You might wanna put this regular pizza in the oven for (no longer than) 5 minutes just to get it going


  3. Step 3

    Next - put one tortilla on top of your pizza. Then tear one in half and use that to cover the rest (this actually depends on the size of your pizza base. You may only need one tortilla per layer - but if it's a big one here's a pic of how I did it)

  4. Step 4

    Put your toppings on! Again!
    Then repeat step 3 and 4. You could make it bigger - but that would be crazy
    This pizza needs to be put on a baking tray! (preferably a perforated one to give the pizza a crispy bottom)


  5. Step 5

    Bake in the oven. Strictly speaking, pizza should be cooked quickly at high heat but this needs a little longer and you don't want it to burn. 180 degrees centigrade for 15 mins, check it. If it looks a little pale Give it another 5 (keep doing this and checking till done. It helps if your oven has a window so you don't let heat out)

  6. Step 6

    Enjoy! You will need a knife and fork if it's as big as mine was.

    I can't say how many people this will feed 'cos it depends how hungry or greedy you and your friends are

An interesting variation to a pizza..
there is only one mistake in your receipt (if I can call it a mistake, since the receipt is yours..) PIZZA ONLY GOES WITH MOZZARELLA, ABSOLUTELY NOT WITH ANY OTHER CHEESE!!! trust an italian girl..

you are right of course! i would only use mozzarella, but i (sadly) kno people who will only eat mild coloured cheddar (coloured?!)like that's the only cheese suitable for every situation.
