Pesto Pasta

A Quick, healthy and yummy meal!

This is a fast meal that is delicious amd so easy to make!

This version is vegetarian, but can easily be made vegan (just add a vegan cheese) or you can add any protein you like.

  1. Step 1

    First start your water boiling for your pasta. Get all your ingredients ready.

    When you add the noodles to the water that's when we get started (or pre-make the sauce if you need the extra time, this sauce will sit just fine). Any type of noodles will work but here I am using Spagetti.

    I love my little chopper!!! You can use any small chopper, food processor or hand chop the basil if you do not processor.

    Fill the chopper, with basil, for two people I use approx. 1 cup of basil.

    Add 3 garlic cloves or more to taste. I also add fresh ground black pepper and Granulated Garlic.

    Add approx. 1 1/2-2 tbsp Garlic Oil or Extra Virgin Olive Oil.

    I also like a splash of Balsamic Vinager, but that is optional.

    Then add vegetable stock.

    It's healthy and yummy and has just as much flavor as Chicken stock but with out all the fat.

    I add this by eye it is approx 2 tbsp, it should offer enough liquid to make the basil blend easily but not create a liquid.

    The last step is rather unusual but adds a nice flavor, take some of the liquid from the pasta as it is almost finished cooking. This water has a nice starch from the pasta.

    I add approx 1/4 cup. If you want a thicker Pesto add less, for a thinner sauce add more. If you add then blend you can see what the sauce will look like.

    Finish the pasta, toss in the sauce, cheese, pine nuts if you like and a touch of Pepper.

    This is a delicious meal that really impresses.

mmm...i came from Liguria (were Pesto was first created!)your pesto is good!;P Try it with a pasta called Linguine, is more ruid and flat than spagetti!

A couple of chickpeas would be good to give it a bit of veg protein, I think I'll have to try this!
