Mix the cashew butter, olive oil, and egg together and then add 1 cup soy milk to smooth out the butter.
Add pancake mix and handful of pumpkin seeds to cashew/soy mix, stir until almost smooth (unless you hate lumpy pancakes).
If you need more soy milk feel free to add it until your batter has reached your desired pancake consistency.
As you cook your pancakes you will put 1 slice of cheese and 1 slice of apple side by side on the "raw" side so that it hits the pan when you flip your pancake. This sears the apple and makes the cheese crispy.
