Carrot Slaw

A cheap, easy side dish!

This recipe can be made with vegan mayonnaise, or otherwise altered to suit individual preference. Note that my measurements are approximate, but it's hard to mess up this dish.

You can add spices to make it more unique or to complement the main course. Me, I just like it a bit sweet.

    Gather all desired tools: cutting board, sharp knife, measuring cups (if you need them! I tend to approximate with my ingredients), grater, mixing bowl, and spatula.

    Gather ingredients: vinegar (rice vinegar shown), mayonnaise, carrots, celery, raisins, and apple.

    Make the dressing: Add 1 Tbs vinegar (white, rice, or apple cider is fine) and 1/4 cup mayonnaise in a medium-sized mixing bowl. Mix together until blended. Add approximately 1 Tbs sugar for a sweeter salad. Mix just until smooth.

    Prepare salad: Remember to thoroughly wash all produce.
    1. Grate 2 cups of carrots (approximately 2-3 carrots)
    2. Finely dice 1 large stalk of celery (the finer the better - you will hardly taste it, but gives the salad nice texture)
    3. Dice up half of a small apple, leaving the skin on.
    4. Measure out raisins, approximately 1/3 cup. (I used a jumbo medley, so I diced them into smaller pieces)

    Mix it up! Just enough to evenly distribute the dressing.

    The mixing bowl I chose was a bit too small...

    Transfer to a serving dish, cover, and refrigerate until chilled. Enjoy!

    Options:

    ** Garnish servings with sunflower seeds or poppy seeds.
    ** Add drained canned pineapple to replace part of the diced apple.
    ** Add more mayonnaise for a heavier dressing.
    ** Omit all the fruits and just have more carrots and celery for a more savory flavor.
