My Sister with her odd Vegan ideas made a version of these several months ago, and were fantastic, so I tried another recipe she had, more cakey than the others.

4 ounces unsweetened baking chocolate
1/2 cup butter or coconut oil (I used half and half)
4 eggs
3/4 cup Agave Nectar
2 cups or 1 (15-ounce) can black beans, pureed
2 1/2 tablespoons instant coffee
1 cup chopped pecans, walnuts, almonds, or other nut

Preheat your oven to 350*
Grease your 8x8 pan (I ended up using a cake pan, worked just fine)

melt the chocolate and the oil and/or butter in a small sauce pan

Beat the eggs and agave nectar together. Slowly begin to add the melted chocolate (you don't want to scramble your eggs!)

mix in the pureed beans and instant coffee
pour into your pan and bake for 40-45 minutes!

I highly recommend storing these in the fridge. They just taste better cold!

That's interesting. Iv never thought that i would see something that has beans and brownies in the same context. They look good though.

Sounds interesting and imagine that the beans would absord the chocolate and coffee flavor to produce a healthier than typical type brownie - is one I want to try!
