When did you first get in to cooking and do you remember the first recipe you tried?

Helping my mom in the kitchen from when I was little. She cooked from scratch and never followed a recipe. It is how I learned to cook with whatever ingredients I have

What's your kitchen like and how do you keep organized when cooking?

My kitchen has a cooking island and plenty space to prepare. I am usually well-organized when cooking (better than I am at my desk or my wardrobe, for that matter).

What tips would you give to someone wanting to become a better cook?

Organize yourself before you start, have everything ready (don't have a dish going and then realize you need to add something that hasn't even been washed yet). But mostly, rely on the ingredients you work with, rather than measurements given in a recipe. Cook with your gut and heart and always taste everything at any step of the cooking process.

Who would you invite to your dream dinner party and what would you cook for them?

I would invite Carlo Petrini and thank him for bringing Slow Food to our international attention. I would cook something with locally sourced ingredients, from scratch and invite friends and neighbors to table and together family-style (they would have to bring the wine).

Do you do any other crafts and what are your hobbies?

Well, in addition to cooking, I love to eat...

Which cooking blogs do you love to read?

My Custard Pie, The Hedonista, Foodiva (all Dubai-based: I used to live there and it is my way of keeping up with the food scene, although all three blogs are reaching well beyond Dubai in content).
