Prefect moist roast chicken for your family to enjoy, full of flavour.
I love using my slow cooker as I can set it before I go to work and have a hot beautifully cooked meal when I get home, and the added bonus, it makes the best smells fill your house :D

Step 1
Rinse chicken (including cavity) under cold running water. Pat the chicken dry with paper towel. Using your fingers, very gently lift skin away from breast meat on each side to form 2 pockets.

Combine butter, dip, basil and garlic in a bowl. Gently push butter mixture under chicken skin, being careful not to split the skin.

Step 3
Heat oil in a large frying pan. Add chicken, breast side down. Cook, turning, for 10 minutes, or until golden.

Step 4Place a wire rack in themslow-cooker. Place chicken on wire rack, breast side up. Season with salt and pepper. Place the lid on cooker, set to the low heat, Cook for 4 hours or until chicken is tender and cooked through
