Description

I was far too excited when I baked this and totally forgot to take pictures while making this. When I make it again (because it's unbelievable good I WILL make it again), I will post them then. Makes 4 servings, yes only 4! At 350 cal/piece.

Instructions

  1. Preheat oven to 350F. Butter a 9" x 5" x 3" loaf pan.

  2. Combine the 2 cups mashed banana, half cup yogurt, 4 Tbsp butter, 2 eggs, 1 tsp vanilla extract, and 2 tsp banana extract (optional) in a large mixing bowl, stirring to blend.

  3. In a separate bowl, mix together the 2 cups flour, 3/4 cup sugar, half cup walnuts, 1 tsp baking soda, 1 tsp baking powder, 1 tsp ground cinnamon, and 1/2 tsp salt.

  4. Gently fold the dry ingredients into the wet banana mixture and stir until fully incorporated.

  5. Scrape the batter into the prepared pan. Bake on a low oven rack for about 50 minutes or until a toothpick inserted into the center of the bread comes out clean.

  6. Let cool for 5 minutes in the pan. Eat warm or at room temperature.

  7. Enjoy!
