Description

Light and fluffy Blondies made with creamy white beans instead of flour. You won't miss the wheat!

Instructions

  1. Preheat oven to 350º and line an 8x8" pan with parchment paper.

  2. Combine white beans and oil in a food processor or blender and process, stopping to scrape sides at least once, until well whipped and fluffy.

  3. Scrape bean mixture into a medium mixing bowl. Add eggs, egg yolk, ground walnuts, sugar, baking powder, and vanilla. Using whisk stir until all ingredients are combined well.

  4. Pour batter into your prepared baking dish and sprinkle with chocolate chips and walnuts somewhat evenly. Get all the way to the edges!

  5. Bake for 30-35 minutes until they're set. Wait for the brownies to cool completely in the pan before serving.
