2lbs pork
1lb bacon
1/2 cup of beer
1tbsp of mustard seed
2tsp dry mustard
2tsp minced garlic
1/2 an onion minced
2tsp black pepper
2tsp paprika
1tsp ground coriander or just crushed
1tsp kosher salt
1tsp nutmeg
and half a tsp of fresh ground ginger.

I made this recipe as an adaptation of a friends old family recipe for a website. I used wild boar but it works with a variety of meats including venison, rabbit or just plain ole pork. Partially freeze your pork and cut into chunks and grind with the meat grinder. Mince bacon or run it through the grinder alternately with the pork. Add your spices, omit or add to your liking. Add minced onion and garlic with grated ginger, mix well and add ICE COLD beer. Fill casings with the mixture and last rest for a day before cooking. Enjoy
