Casatiello is a typical filled bread we make for Easter in Napoli. The fillin is usually made whit salame, prosciutto, pancetta, and a lot of meat, cheese and salumi (cold cuts). This version i made is for the vegan and vegetarian friends of mine: i guarantee that the taste is really close to the original Casatiello, and is also more digestible and dietetic!! If you are vegetarian, you can replace the feta cheese with provolone cheese. But if you want to make the original version, just replace all the tofu and seitan with prosciutto, salami and cold cuts, the cream with lard and the feta cheese with provolone cheese, and you've done!

PREPARING THE BREAD: Dissolve a teaspoon of sugar in a cup of warm water. Display the flour on a plane, and put in teh center the soy margarine or butter (melted previously in a double boiler or in a pan,)salt, pepper and the cup of water-yeast-and-sugar (if necessary add more water). Work the ingredients until a soft dough. Let rise (about 2 hours) by covering with a clean cloth.
FILL THE BREAD! : Meanwhile cut the tofu, seitan sausage and wurstels into small cubes.
Preheat oven to 180°. Now distribute the ingredients on bread's pasta sprinkled with pepper, salt, chopped walnuts and finally the cream. Then mix the dough with all ingredients.
Resting our Casatiello in the mold, brush the surface with olive oil.
Bake and let it cook for at least an hour at 180°. When the Casatiello is browned on the surface,remove it from the oven and let rest for 10 minutes, until it is warm and ready to eat!
