Vegan Pumpkin Muffins

You Will Need (12 things)

  • 1 ¾ cup Whole Wheat Pastry Flour
  • 1 cup Sugar
  • 1 tbsp Baking Powder
  • ¼ tsp Salt
  • 1 tsp Cinnamon
  • ½ tsp Nutmeg
  • ¼ tsp Ginger
  • ¾ cup Pumpkin
  • ¼ cup Applesauce
  • ½ cup Almond Milk
  • ½ cup Canola Oil
  • 2 tbsp Maple Syrup (or honey)

Steps (5 steps, 45 minutes)

    Lightly grease a muffin tin.

    Mix all of the dry ingredients in a large bowl. (flour-ginger)
    In a separate bowl, mix all of the wet ingredients. (pumpkin-maple syrup)

    Pour the wet ingredients into the large bowl with the flour mix & stir until mixed well.

    Fill the muffin cups until each one is 3/4 of the way full.

    Bake at 400 for 20 minutes or until a toothpick comes out clean.
