Description

Add a touch of magic to your chocolate sandwich cookies with a splash of Unicorn Tears gin liqueur to the buttercream and a handful of sparkles and sprinkles to your dough.

Instructions

    Measure out the flour, cocoa, baking soda and salt into a bowl and top with lots of sparkly sprinkles.

    Mix together.

    Beat together the butter and sugar, then crack in the egg and mix.

    Add the Unicorn Tears gin.

    Whisk the flour into the mixture.

    Form into a dough ball, wrap in cling film and chill in the fridge for a few hours.

    Roll out the dough and cut with a unicorn cookie cutter. Bake at 180'C for 15 minutes.

    Make the icing by whisking together the butter and icing sugar.

    Add the gin and whisk into a creamy filling.

    Spread one half of half of the unicorn cookies with icing.

    Place another unicorn on top and coat the edges in sprinkles. Chill in the fridge before serving.
