This Tunisian Orange Cake is made with Triple Sec to give it a more indulgent twist.

Step 1Whisk together the sugar and eggs.

Step 2Grate in the zest from an orange and then squeeze in the juice.

Step 3Add the triple sec.

Step 4Mix in the ground almonds, baking soda, cocoa and salt.

Step 5Scrape into a greased baking tin.

Step 6Bake at 180'c for 45 minutes.

Step 7Slice the second orange into thin slices.

Step 8Top the cake with orange slices.

Step 9Pour the sugar for the icing into a sauce pan and mix with a little water.

Step 10Bring to the boil and then add the triple sec before removing from the heat.

Step 11Pour the syrup over the cake and sprinkle with crystalized ginger pieces.
