For the salad, assemble:
handful of rocket
1 carrot, shredded with a julienne peeler
red pepper, sliced
50 g tinned tuna (preserved in water), flaked
handful of wholewheat croutons
2 spring onions, sliced
handful of fresh coriander leavesFor the dressing, mix:
2 tbsp mayonnaise
1 tsp dark soy sauce
1 tsp ground gingerVEGAN
ALTERNATIVE
Replace the tuna with
100 g tinned green lentils
