A simple, quick cream of tomato basil that will knock your socks off!
Sweat the sliced onions in bacon grease (or butter/oil) with the salt (this will help them break down faster), after a few minutes add the garlic and dried herbs/spices. Keep going until the onions are soft; 5 minutes ish.
Deglaze the pan with a splash of Jack Daniels or red wine and cook until the liquid is gone.
Add tomatoes, honey and buillion (a cube or equivilant). Simmer, covered, 15 minutes.
dissolve half a block of cream cheese into the hot soup, stirring helps speed up the process.
Serve hot, topped with fresh basil. EAT COPIOUSLY!!
