I made this soup/stew with heirloom tomatoes often because this soup/stew reminded me of Summer.

You Will Need (12 things)
- 7 lbs Beef Tomato roughly chopped
- 1 lbs Cherry Tomatoes
- 4 tbsp Extra Virgin Olive Oil
- 3 Shallots chopped
- 3 Garlic Cloves peeled & chopped
- 2 oz Capers in vinegar, rinsed
- 2 tbsp Red Wine Vinegar
- 1 tsp Agave Nectar
- 1 handful Italian Parsley , roughly chopped
- 1 tbsp Herbes De Provence
- Salt & pepper, to taste
- 10 oz cooked tortellini or any Pasta you preferred
Steps (3 steps, 30 minutes)

Heat olive oil in a large saucepan over medium heat. Add heirloom tomatoes, shallots, garlic, and cook for 5 minutes.

Adjust the heat to high, then add seasoning, capers, agave nectar and red wine vinegar; bring to boil. Lower the heat down and simmer for 5 minutes, or until the tomatoes break down. Add seasoning if needed.

To serve; divide cherry tomatoes & tortellini into each bowl, and ladle tomato stew on top. Add Italian parsley & serve immediately.
