Tofu Burger

I created this recipe awhile ago, its really easy to follow and this is one of my friend's favorite choice from my menu! :) Ingredients: burger buns, vegetables of your choice 250 gr grinded meat (anything, preferably red meat. I used mixed grinded meat. you can also replace this with another block of tofu for vegan burger) Salt, blackpepper, garlic powder 3 tbsp coriander powder 2-3 tsp garam masala/ngohiong powder (chinese five spices) Half cup/pack of sour cream (100 ml) 2 tbsp paprika powder 2 tsp Kikkoman sauce 1-2 tbsp dried parsley 1 large block of tofu (preferably smoked tofu) Panier flour (bread crumbs flour) 1 medium egg Optional: caramelized onion (from 1 large onion) Sauce: 1 ½-2 tbsp butter (unsalted) ¼ cup/pack of sour cream (50 ml) 1 tbsp flour Salt, blackpepper, garlic powder Optional: mixed herbs or a mixture of rosemary powder, sage, basil, oregano ½ cup fresh cream (100 ml) 50-75 ml full cream milk

Instructions

  1. Patty: place meat into a large bowl. Crumble the tofu and mix thoroughly. Add all dry seasonings including Kikkoman sauce and sour cream (also caramelized onion if you like), except dried parsley. Mixed through with hands. Add egg and pour panier flour. Mixed carefully until the dough is not so sticky and is formable. Mixed in dried parsley, and mix through. Let sit for 30 minutes, then divide to 6 patties for standard size or 4 for maxi burgers. Fry with butter on medium heat or grill until cooked through.

  2. Sauce: Melt the butter in low heat. When its all melted, mix in flour and stir quickly until all dissolved. Mix in 50 ml milk, mix through. Add cream, then sour cream. Season and stir evenly (Optional: mixed herbs). Try to taste, if sauce is too thick, add the rest of the milk. If too thin, add fresh cream. Note: The sauce shouldn’t taste too strong and overpower the meat. Remove and set aside.

  3. Finishing: assemble burger. Add vegetables, i.e sliced tomatoes and pickles. Enjoy! :)
