I've been on the hunt for peanut butter chips for a while and finally found a packet of Reese chips at a Mexican supermarket. Super excited to try them out, I whipped up some of these mini thumbprint cookies.

The great thing about these cookies, is that they're perfect to make with any leftover dough you have when baking cookies, so they'll work with any recipe. If you want to make your own dough from scratch then cream together 100g butter and 100g sugar. Beat in an egg and then sift in 200g flour. Mix into a thick dough.
Roll the cookie dough into small balls.
Press a peanut butter chip into the top of each cookie.
Bake for 10 minutes at 180'C.
Enjoy
