The secret of Zucchini soup
Zucchini soup is something incredible delicious if done right. I experimented a lot to create the perfect zucchini soup, but in the end it comes down to the quality of one ingredient; the zucchini, of course!
If you use my recipe with high quality zucchinis you will have a blast in your mouth.
Because the quality is so important, I eventually started to grow my own zucchini in my garden and that was a wise decision; the soup never tasted so good!
Peel the onion and cut it to very small pieces.
Also peel the zucchini thoroughly(!) and cut it to pieces.
Prepare 500ml of beef broth (I use a soup cube)
Put the butter into a pot and sauté the onions. Then also put the zucchini into the pot and let them get a bit mushy. Then add the beef broth and the lovage and let it cook gently about 45 minutes (put a lid on the pot).
Add the heavy cream and blend it thouroughly. Turn down the heat and add sugar salt and black pepper. Stir! Done!
If you want, you can add sliced ham when you serve the soup, just like on my photo. That goes great together!
