I have referred to various sites to make these two dishes. Finally I made my own version.
In a box or a ziplock : >Juice of 1/2 orange >Zest of 1 orange >Ginger 1tsp >Garlic 1tsp >Salt and sugar to taste >Ground paprika 1 tbsp, more or less.(as per taste) >Soy sauce 1 tsp >Cinder vinegar 1 tsp Make the exact same sauce twice and store the second one for later.
Marinate 1 pound chicken cut into 1 inch sized pieces in the sauce.
Toss the pieces in corn flour to coat well.
Pan-fry with little oil in batches till golden brown.
Let the oil drain.
Add some more oil to the pan and saute 1 tbsp ginger and 1 tbsp garlic.
Add the sauce to and 1 cup of water
Add 1 tbsp cornflour mixed with 2 tbsp water and mix well. Once the sauce bubbles add the cornflour mix in a stream, stirring all the while till it thickens. (I doubled the sauce quantity as I wanted to make a lot of gravy)
Add the fried chicken ...
...and mix well. There's your Orange Chicken! Now lets make that spicy Noodles :D
Pound some dried red chillies
Heat some oil in a pan. I used olive oil but you can use a mixture of peanut oil and olive oil or vegetable oil. Add the pounded chillies to it and heat it till the oil starts to smoke.
Sieve the oil and discard the chilli residue. Transfer the oil back into the pan and heat it again.
Add 1 tbsp each of minced ginger, garlic and scallion whites. Saute for a minute on high heat.
Toss in 2 shredded carrots, 2 thinly sliced onions and a handful of chopped french beans. Saute on high heat for a min.
Add a mixture of 2 tbsp soy sauce and 2 tbsp honey(adjust honey to taste. 2 tbsp made it too sweet for my liking.)
Mix well and saute for another couple of minutes.
Add 200 gms noodles (cooked as per instructions)
Toss well for 2-3 min on high heat.
Serve with orange chicken. Garnish both with scallion greens.
