Summer rolls are great for a healthy but filling supper. You can fill them with any fresh vegetables, meat or seafood and they're fun for everyone to make up at the table.
Summer rolls are great for a healthy but filling supper. You can fill them with any fresh vegetables, meat or seafood and they're fun for everyone to make up at the table.
Make the sauce by stirring together the peanut butter, water, lime juice, soy sauce, maple syrup and rice vinegar over a gentle heat until the peanut butter dissolves and then remove from the heat.
Cook the rice noodles and then run under cold water. Pop them in a bowl and place them on the table ready to serve.
Thinly slice the carrots, beetroot, spring onions and herbs and spread out on a plate.
Cut the Quorn pork into thin slices and fry with a generous amount of teriyaki sauce and a splash of soy sauce. Grate the ginger on top and sprinkle with sesame seeds.
Cook the Quorn pork until it starts sizzling.
Place the dipping sauce into bowls and place on your serving plates with the rice roll papers. Fill another bowl with warm water.
Serve the Quorn pork while it's still sizzling.
To make each roll, dip the rice paper rolls in the bowl of warm water for a few seconds until soft.
Place the rice paper roll on your plate and place some noodles in the middle.
Sprinkle some vegetables and herbs on top.
Lay some Quorn pork on top and then fold up the bottom of the rice paper roll.
Fold the sides of the rice paper roll into the middle and it's ready to eat!
