This is easy to make.
It can be made in advance.
You can make it more or less spicy to taste.
Chop onions, garlic & chillies.
Cook veg for a few mins.
Add the seasoning.
Add stock & simmer until reduced to half.
Crush corn chips.
Layer into Casserole dish.
Layer meat sauce on top of chips.
Layer cheese on top of sauce.
Continue to layer items until all is used.
Place in oven 200 degrees for 20 mins.
