Instructions

  1. Preheat the oven to 170°C/fan 150°C/gas 4.

  2. 
Boil the sweet potato in a pan until soft or just tender. Drain and mash with 2 tablespoons of olive oil or you can use coconut oil. Add a little of the cooking stock from the pan if needed. Season with rock salt and pepper.

  3. Heat some oil in a pan and sauté the onions until soft.

  4. Add the minced meat and cook for another 5 minutes. Add the diced carrots and cook again for 5 minutes.

  5. Pour in some more of the stock from the sweet potatoes, about 120ml, and simmer uncovered for about 5 minutes. 
Spread the cooked meat in a dish and cover with the mashed sweet potato.

  6. 
Drizzle some more olive oil over the top and a sprinkle of rock salt, and bake in the oven for 30 minutes. 
Remove from the oven and garnish with paprika.
