Why not gives this a go? Its a simple twist on the classic Shepard's Pie, I found with using the sweet potato instead of regular potato it adds more flavour with out using the ingredients that some if the best mashed potatoes use, such as cream etc. with this meal serving 4 people it only totals to a small 143 calories which is great for us people trying to stick to a certain calorie limit, or not. Who said the word "diet" had to be mean? Lol try it before you judge healthy meals again

Instructions

    Preheat non stick pan over medium heat. Add onion and cook until translucent, add garlic and cook further one minute.

    Add lamb mince to pan and stir in with onion until well combined. Cook lamb mince until well browned, add broccoli and chopped tomatoes and stir well to combine. Set aside. (I have added mushroom and carrot aswell this time, it's totally up to you with what vegetables you would like to use)

    Place sweet potatoes in small sauce pan and cover with water Cook until sweet potato is tender and drain.

    Mash sweet potato well using fork. Lightly grease four oval oven proof ramekins and evenly place lamb mince in each until ¾ full.

  5. Place sweet potato over the top (add a small amour of low fat cheddar if desired) and cook in oven at 180 degrees or 160 degrees (fan forced) for 10 minutes or until bubbling. Serve immediately with salad or cooked green vegetables if desired.
