Sweet Potato & Goats Cheese Ravioli

Sweet potato, rosemary & goats cheese ravioli topped with hazelnuts.

You Will Need (11 things)

  • 275 g '00'flour
  • 1 Egg
  • 150 g Goats Cheese
  • 4 Sweet Potatoes
  • 2 tsp Nutmeg
  • 2 tsp Cinnamon
  • 2 tsp Cumin
  • 2 tbsp Herbs
  • 1 tbsp Honey
  • 6 tbsp Butter
  • ½ cup Hazelnuts

Steps (14 steps, 45 minutes)

    Sieve the flour into a bowl. Make a well in the middle, and add the egg. Using a fork, slowly mix together until the dough forms. Once the dough is smooth, wrap it in cling film, and leave it to prove for 30 minutes.

    Using a pasta machine, run the dough through. Work your way through the settings from thickest to thinnest. Dust it with flour each time to prevent it sticking. Keep rolling, folding and repeating! Eventually, the dough will run smoothly through the machine. For the ravioli, stop at the medium setting on the pasta machine.

    Roast the sweet potatoes and mix together in a bowl with the goats cheese and spices.

    Add the herbs and honey and mash together with a fork until smooth.

    Cut a sheet of pasta dough and lay out on a flat surface.

    Scoop four large balls of filling and place evenly on one side of pasta sheet. Moisten the edges around the filling with warm water.

    Fold the other side of the pasta sheet on top.

    Press the pasta dough around the edges of the filling and cut in to four with a pizza wheel.

    Press the edges of the pasta around the filling, to make sure there are no air bubbles.

    Use a fork to press the edges.

    You can get creative and make hearts and other shapes of pasta too.

    Melt 4tbsp of butter in a sauce pan until golden and fry with the roasted hazelnuts.

    Cook the ravioli in a pan of boiling water for 2 minutes.

    Drizzle with the butter sauce and serve hot.
