Sweet Potato Burgers

Who says vegetarians can't have all the fun? The sweet potato burgers are delicious and heartwarming!

It's tricky to find a decent veggie burger up here in Scotland, so we decided to make our own. I love anything with pumpkin, sweet potato or butternut squash in and these were some of the best burgers I've ever had. They're really easy to make and you can whip up a batch in just under 30 minutes (if you use the microwave option), so they're great for a quick meal.

You Will Need (14 things)

  • 1 Egg(s)
  • Avocado
  • Seedy Buns
  • ½ cup Wholemeal Flour
  • Spinach (to serve)
  • Mayonnaise or favourite sauce
  • 2 cloves of finely chopped Garlic
  • 1 tsp Onion Powder
  • 2 tsp Cayenne Pepper
  • 2 cup Homemade Breadcrumbs
  • 1 ½ cup Kidney Beans
  • 4 large or 5 medium Sweet Potato
  • Salt & pepper (to season)
  • 1 tbsp Thyme Honey

Steps (10 steps, 30 minutes)

    Pop two slices of bread in a blender and blitz to make breadcrumbs. Bake in a hot oven for 5-10 minutes until golden.

    Bake your sweet potatoes. If you have time, you should do this in the oven as it'll make it taste better, or you can blitz them in the microwave for 10 minutes. Peel the potatoes and mash together in a large bowl with the kidney beans.

    Mix in the chopped garlic, honey and all your spices. Season with salt and pepper to taste.

    Beat the egg and mix in with two thirds of the breadcrumbs and the wholewheat flower.

    Leave the mixture to cool in the fridge for 10 minutes.

    Form your mixture in to four round patties and coat with the remaining breadcrumbs.

    They should be looking pretty tasty by now.

    Heat up a frying pan with some oil and pop your patties in.

    Leave to cook on one side until golden before flipping over.

    Serve on top of a toasted bun with some spinach leaves, sliced avocado and mayonnaise.
