You Will Need (7 things)

  • 1 Side of hot smoked Salmon
  • Bunch of Dill
  • Capers
  • FOR MAYONNAISE

  • 400 ml good Olive Oil or canola oil
  • 60 g Egg Yolks
  • Dash of White Wine Vinegar

Steps (5 steps, 15 minutes)

    TO MAKE THE MAYONNAISE
    Put egg yolks and vinegar in a bowl and slowly whisk in oil
    (Add a little cold water when necessary if it gets too thick)

    Finely chop dill & add to mayonnaise (add optional capers)

  3. 3

    Remove skin from side of salmon & any obvious bones

  4. 4

    Break up salmon with a fork & leave chunky for a textured pate then mix in mayo

  5. 5

    Season to taste

    Serve with some of your favourite oatcakes or Melba toast & a wee salad
