You Will Need (7 things)
- 1 Side of hot smoked Salmon
- Bunch of Dill
- Capers

FOR MAYONNAISE
- 400 ml good Olive Oil or canola oil
- 60 g Egg Yolks
- Dash of White Wine Vinegar
Steps (5 steps, 15 minutes)

TO MAKE THE MAYONNAISE
Put egg yolks and vinegar in a bowl and slowly whisk in oil
(Add a little cold water when necessary if it gets too thick) -

Finely chop dill & add to mayonnaise (add optional capers)

Remove skin from side of salmon & any obvious bones

Break up salmon with a fork & leave chunky for a textured pate then mix in mayo

Season to taste
Serve with some of your favourite oatcakes or Melba toast & a wee salad
