A family fun pudding that everyone can make.
My mother in law gave us some currants, I asked her what I should do with them.

So this pudding was mum and dads idea, made by my daughter while I took the photo's and named by my husband when we dished it up.

    Gather your ingredients.

    Cut the crusts off your bread and slice.

    Then cut into fingers. Leave for a bit.

    Get your caster sugar and add to the pan.

    Add the water and stir until sugar has disolved.

    Add the currants and mix. Leave to cook for about 7 mins, just to soften the berries.

    Meanwhile..

    Line the pudding bowl wth the bread fingers.

    Pour in HALF of the berry mix, keeping 4 tbsp juiceby for later.

    Now place some bread fingers on top

    Now pour in the rest of the berries.

    Place bread fingers on top.

    Carefully place a small plate on top.

    Put in the fridge OVERNIGHT.

    The reserved juice can be kept in the fridge too.

    Carefully tip the 'Brain' out onto a plate.

    Pour over the juice to cover any white patches.

    Now your ready to serve.

    If your fruit is still alittle sharp serve with cream.

this looks like a coolness recipe, i wonder how i'd taste with walnut bread. (i must confess though i have no clue what a currant is! lol)

i dont like pudding or soggy bread, that's what half of this looks like, HOWEVER! this is so original and great. i love the idea of it, my sister may try it. this could be a great dish for halloween aswell! Happy
