Use a little sugar and vinegar to create a shrub with strawberry and pineapple. Shrubs are a sweet-tart syrup that can be mixed with sparkling water or used in a cocktail. They make good use of fruit that might be aging quickly on your countertop and are very simple to make. This is the best beginner shrub I have made and is a beautiful pink color.

You Will Need (5 things)
- A quart or half gallon Mason Jar
- ½ cup Strawberries
- 1 ½ Apple Cider Vinegar
- 1 ½ Sugar
- 1 ½ cup Pineapple
Steps (4 steps, 15 minutes)

Chop the fruit and place in the bottom of a large jar. You can fit it all in a quart jar, but I prefer to use my half gallon and have plenty of room in case my fruit isn’t chopped small enough to fit nicely in a quart.

Add sugar to the fruit and toss in jar to coat. Add lid and leave for 24 hours.

Shake and then add the vinegar. Screw the lid on tight and leave on the countertop for about a week, shaking or stirring daily. After the week has passed, strain using a cheesecloth-lined colander or strainer if you care about absolute clarity or just a strainer if you aren’t particular.

The shrub is now ready for mixing! Store in the refrigerator until mixing in the following ways.
Strawberry Pineapple Cocktail:
1 part tequila
1- 1 ½ parts strawberry pineapple shrub
3 parts sparkling water
over ice.
Or as a refreshing addition to sparkling or plain ice water, add 1 to 3 tablespoons shrub.
