Amazing marshmallows with a hint of strawberry flavor!

These were a total breeze to make, and I used the strawberry sugar I made previously (https://theyearlingblog.wordpress.com/2015/02/05/day-37-strawberry-sugar/) to give them a sweet strawberry flavor. The only problem is having to wait for them to set up.

Description

These were a total breeze to make, and I used the strawberry sugar I made previously (https://theyearlingblog.wordpress.com/2015/02/05/day-37-strawberry-sugar/) to give them a sweet strawberry flavor. The only problem is having to wait for them to set up.

Instructions

  1. Small 107367 2f2015 02 10 183410 img 4828

    Your ingredients.

  2. Small 107367 2f2015 02 10 183406 img 4835

Bloom your three packets of gelatin in a half cup of water.

  3. Small 107367 2f2015 02 10 183438 img 4841

Combine your sugars, corn syrup and the last 1/2 cup of water into a saucepan and cook over high heat until you reach 420 F. Then immediately remove from heat.

  4. Small 107367 2f2015 02 10 183555 img 4842

Put your gelatin into a stand mixer and turn it on low to break up the disc of gelatin.

  5. Small 107367 2f2015 02 10 183637 img 4845

Then, slowly and very carefully, pour your strawberry sugar mixture into the bowl.

  6. Small 107367 2f2015 02 10 183738 img 4846

Increase the mixer speed to high and let whip for 8-10 minutes.

  7. Small 107367 2f2015 02 10 183803 img 4853

Once it's done whipping take it out and put it in a greased and lined pan. I used a 13 x 9 but if you want thicker marshmallows feel free to use a 9 x 9.

  8. Small 107367 2f2015 02 10 183943 img 4857

Cover with another piece of greased cling film and let sit for 6-8 hours at room temperature to set.

  9. Small 107367 2f2015 02 10 184009 img 4873

Once you've done that, flour a work surface with a mixture of the corn starch and powdered sugar and turn out your marshmallow block onto said floured work surface.

  10. Small 107367 2f2015 02 10 184233 img 4877

Then cut them to whatever shape you like, toss them in the corn starch/powdered sugar mixture to stop them from sticking and use a fine mesh strainer to get rid of any excess powdered sugar.

Then just plate them up, serve and watch them disappear before your eyes!
