Part of my inspiration for these cupcakes came from a recipe my friend made for her Home Ec. class and from a recipe for a lemon Bunt cake from "The Cake Mix Doctor" by Anne Byrn (which I would highly recommend).

Description

Part of my inspiration for these cupcakes came from a recipe my friend made for her Home Ec. class and from a recipe for a lemon Bunt cake from "The Cake Mix Doctor" by Anne Byrn (which I would highly recommend).

Instructions

  1. Preheat oven to 350 degrees and lightly grease 24 cupcakes liners.

  2. Mix cake mix, Jello, oil, water and eggs in an electric mixing bowl. Once they are mixed beat them on high for 2-3 minutes. Grate in lemon zest and mix. (You can use however much you want depending on how Lemony you want your cupcakes)

  3. Pour cupcakes batter evenly into cupcake liners and bake for 18-21 minutes. Cupcakes are done with they spring back slightly when touched and when you can stick a toothpick/skewer in them and it comes out clean.

  4. Put cupcakes on cooling racks to cool. Let them cool COMPLETELY. (this usually takes 1-2 hours)

  5. Once cupcakes are completely cooled, it's time to ice them! :D Whip your whipping cream in an electric mixer on high until it thickens and is a good enough consistency for your liking. (if you wanna be lazy, you can just use store bought whipped topping)

  6. Lastly, apply the whipped topping; you can do this by either just scooping it onto the top or you can get all fancy and used a pastry bag (like you would use for icing) to make it all pretty. Then slice up some strawberries and put them on top in whatever fashion you deem fit. enjoy! ^-^
